Coconut Quinoa Bars

Coconut-Quinoa Granola Chunks/Bars
Ingredients
- 1 cup whole grain uncooked quinoa
- 1 cup oats
- ½ cup shredded (unsweetened) coconut
- 1 cup coarsely chopped nuts and/or dried fruits (cashews, ground nuts, almonds, pecans, raisins etc)
- ½ cup honey
- ½ cup peanut butter (i.e. blend ground nut to paste)
Instructions
- Preheat oven to 350F. Spread quinoa and oats on a baking pan and toast for 10 minutes
- Return mixture into a bowl and add dried fruits, nuts and coconut
- In a pan, combine honey and peanut butter then bring to a boil and remove from heat
- Pour over dry mixture and combine completely
- Pour the mixture into a baking dish and spread evenly. Bake for 20 minutes then let cool for at least 1 hour
