Coconut Chicken Curry

Ingredients
  

  • Boneless chicken breasts 1kg - cut into chunks
  • 1 teaspoon salt and chili pepper
  • 1 tablespoon coconut oil
  • 2 tablespoons curry powder
  • ½ small onion – finely chopped
  • 1 cup tomato sauce
  • 2 cups coconut milk
  • Coconut flakes optional

Instructions
 

  • Season chicken with salt and pepper
  • Heat oil in a large pan over medium heat and add chicken, curry and onions. Stir gently to coat chicken with curry. Cook for 10 minutes or until chicken is fully cooked
  • Pour coconut milk and tomato sauce in the pan and stir
  • Simmer for 20-35 minutes, stirring occasionally to prevent burning. Add coconut flakes (optional)
  • Serve hot over a bed of brown rice, sweet potatoes, or side of your choice
